KETO CARMEL COATED NUTS

Ingredients
3/4 a cup of pecan nuts
2 tablespoons of unsalted butter
3 tablespoons of heavy cream
1 heaped tablespoon of sweetener like xylitol
1/2 teaspoon of vanilla
A pinch of salt
Instructions
Lightly roast the nuts in the oven
Add the butter, cream and sweetener to a small pan
Stir over medium heat until the sweetener is dissolved and the color starts to darken
Add the vanilla and keep stirring
Reduce the heat and keep stirring until the caramel is dark brown
Remove from the heat and add the salt and nuts
Coat the nuts thoroughly with the sauce
Pack the nuts on parchment paper and place in the refrigerator for about half an hour
